What is Kebsa Spice?

Kebsa spice is a traditional  Middle Eastern blend (Saudi Arabian and Gulf areas) consisting of cardamom, cinnamon, cumin, cloves, nutmeg, coriander, loomi, red and black pepper.

It is ery common with chicken or lamb. Use as a rub, especially on kebab, or to season stews and steamed grains. Enjoy it on grilled fish, in vegetable stew and as a popcorn seasoning. For kebab, offer sumac at the table as a finishing touch, sprinkled over the cooked meat to taste.

1 tbsp red pepper
1 1/2 tsp cumin
1 1/2 tsp cinnamon
1 1/2 tsp ground loomi (dried lime)
1 tsp cloves
1 tsp black pepper
1 tsp ground cardamom
1 tsp nutmeg
1 tsp ground coriander
1/2 tsp saffron threads
