What is Sambar?

Sambar is a South Indian soup. Sambar powder or sambar masala is the spice blend that is the star of this soup. Fresh curry leaves can be substituted if the sambar is to be made straightaway otherwise use dried curry leaves, as this will enable storage of the sambar mix for up to 12 months.
