The Epicentre's Green Curry Chicken

A rich and spicy version of green curry that is so quick to prepare!



1 1/2 tablespoons vegetable oil
2-3 chicken breasts cut into small pieces
3 tablespoons of The Epicentre Thai Coconut Green Curry powder
The Epicentre Kaffir Lime leaves
1/4 teaspoon The Epicentre  Jalapeno powder
1 1/2 cups of chicken broth
1 small onion sliced
1 small green pepper seeded and sliced
1 small red pepper seeded and sliced
1 small eggplant, (we used a chinese eggplant) sliced
2 small red chiles diced
1 tablespoon fish sauce
1 tablespoon brown sugar
6 basil leaves torn



Heat oil in medium saucepan over medium high heat. Add chicken and cook until browned on bottom (about 3 minutes) Add curry powder and jalapeno powder and stir well, cooking for about a minute

Add broth, green pepper, red pepper, eggplant, fish sauce, brown sugar, lime leaves, small red chiles and basil. Allow broth to come to a simmer, reduce heat and simmer for 4 to 5 minutes

serve with rice, garnish with lime wedges and more basil

(Optional would be to add some coconut milk for a thicker creamier sauce, all the flavour is there it is up to you!)
