Pork with CorianderPrep Time: 10 minutes

Total Time: 50 minutes
- 2 lb pork fillet
- 1 1/2 cup dry cider
- 1/2 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp coriander, crushed
- 1/2 tsp each salt and pepper
- 2 tbsp cream
Cut the pork fillet into 1/2 inch slices
Combine the cider, 3/4 of the oil, coriander, lemon juice,, salt and pepper.
Marinade the pork slices for 8 hours or overnight.
Pat dry the pork slices and brown in a fying pan using the remaining olive oil
Add the marinade, bring to a boil, cover and simmer for 20 minutes
Remove the meat in a serving dish and tent to keep warm.
Add the cream to the pan and heat. Pour over the pork slices and serve.
