Fish in Soy Sauce
Indonesian sweet and sour fish. Plain rice and a cucumber salad make a good accompaniment Serves 4-6
• 4 tbsp oil
• 2 garlic cloves
• 1 onion, small, chopped
• 1/2 tsp chilli powder
• 1 tsp galangal powder
• 1 1/2 lb cod fillets
• 2 tomatoes, skinned and chopped
• 4 tbsp tamarind water or lemon juice
• 2 2/3 tbsp soy sauce
• 1 1/3 tbsp sugar, dark brown
Heat oil, fry garlic and onions until soft and golden.
Add chilli and galangal, stirring for a minute.
Now add fish and brown on both sides.
Add tomatoes, tamarind, soy sauce and sugar. Cover and simmer gently until the fish is cooked but still firm.
Place fish on serving dish and cover with the sauce.
