Artichoke Appetizer (Spain)
Serve this as a vegetable side dish or as an appetizer in the manner of Spanish tapas.Prep Time: 15 minutes

- 2 cans (14 or 16 oz. each) artichoke hearts, or 2 packages (10 oz, each) frozen artichoke hearts
- 1 clove garlic, crushed with salt
- 1/4 cup olive oil
- 2 tbsp. lemon juice
- 1 tsp. sumac
- 1/4 tsp. Aleppo pepper
- 1/4 cup minced cilantro
Drain and quarter the canned artichokes. Or, prepare the frozen artichokes according to package instructions, and quarter.
Combine the dressing ingredients and pour over the artichoke hearts.
Marinate for at least 1 hour. Serve at room temperature.
