Makes about 3/4 cup
- 1/2 cup tamarind concentrate
- 1/2 cup hot water
- 1/4 cup dark brown sugar
- 1 tsp each ground coriander, cumin and anise
- 1/2 teaspoon hot Indian chile powder
- 1/2 teaspoon salt
Soak the tamarind in the hot water for 20 minutes. Add sugar and cook over low heat, stirring, just until sugar is dissolved, then return mixture to cleaned bowl.
Stir spices into tamarind mixture along with chile powder and salt. Stir well and add a little water if it is too thick. Keep refrigerated for up to a week.
